Golden crispy Arabic dumplings drizzled with syrup or date molasses. These are popular in UAE, Saudi, and across the Gulf, especially during Ramadan.

**For the dough:** **للعجينة:**

2 cups all-purpose flour ٢ كوب دقيق أبيض

1 tbsp cornstarch ١ ملعقة كبيرة نشا

1 tbsp sugar ١ ملعقة كبيرة سكر

1 tbsp instant yeast ١ ملعقة كبيرة خميرة فورية

¼ tsp salt ¼ ملعقة صغيرة ملح

¼ tsp cardamom powder ¼ ملعقة صغيرة هيل مطحون

1 ¼ cup warm water ١ و ¼ كوب ماء دافئ

2 tbsp yogurt ٢ ملعقة كبيرة زبادي

**For frying:** **للقلي:**

Vegetable oil, for deep frying زيت نباتي للقلي العميق

**For topping:** **للتزيين:**

Date syrup or sugar syrup دبس التمر أو شيرة

Sesame seeds سمسم محمص

*Instructions | طريقة التحضير*

*English:*

1. *Make the dough*: In a bowl, mix flour, cornstarch, sugar, yeast, salt, and cardamom. Add yogurt and warm water gradually. Whisk until you get a thick, sticky batter. Cover and let it rise 1.5 hours until doubled.

2. *Heat oil*: Pour oil in a deep pot. Heat to 170°C / 340°F. Test with a small drop — it should sizzle gently.

3. *Fry*: Dip a teaspoon in oil, then scoop small amounts of batter. Drop into hot oil. Fry until golden brown, stirring so they cook evenly. About 3-4 mins.

4. *Drain & coat*: Remove and drain on paper towels for 30 sec. Immediately drizzle with date syrup or sugar syrup. Sprinkle sesame seeds.

5. *Serve hot*: Best eaten warm while crispy outside, soft inside.

*العربية:*

1. *تحضير العجينة*: في وعاء، اخلطي الدقيق والنشا والسكر والخميرة والملح والهيل. أضيفي الزبادي والماء الدافئ بالتدريج. اخفقي حتى تحصلي على عجينة سائلة ثقيلة ولزجة. غطيها واتركيها تتخمر لمدة ساعة ونصف حتى يتضاعف حجمها.

2. *تسخين الزيت*: سخني زيت غزير في قدر عميق على حرارة ١٧٠ مئوية. اختبريه بنقطة عجين صغيرة — يجب أن تفور بهدوء.

3. *القلي*: اغمسي ملعقة صغيرة في الزيت، ثم خذي كمية صغيرة من العجين واسقطيها في الزيت الساخن. اقليها حتى تصبح ذهبية اللون، مع التحريك لمدة ٣-٤ دقائق.

4. *التصفية والتزيين*: أخرجيها وصفيها على ورق مطبخ لمدة ٣٠ ثانية. اسكبي عليها دبس التمر أو الشيرة فوراً. رشي السمسم.

5. *التقديم*: تقدم ساخنة وهي مقرمشة من الخارج وطرية من الداخل.

1. *Extra crispy*: Add 1 tsp of custard powder to the flour

2. *Round shape*: Squeeze batter from your fist and use an oiled spoon to cut it off

3. *Don’t crowd the pan* or they’ll stick together and lose crispiness
